Elena transforms the raw milk into cheeses, starting from the softer and delicate textures such as the rennet-processed Tuma, the lactic Robiole, the Picinin small cheeses covered with herbs and spices, up to the more decisive flavors of the seasoned variants such as the Quadrotte aged from 40 to 50 days, the Grandius aged from 3 to 4 months and the Blu Capralanga.
